Chicken Adobo

A Filipino household staple dish, it is best paired with a white steamed rice.

Servings 4

Ingredients

  • 12 pcs. Chicken wings
  • 1/2 cup soy sauce
  • 1 cup vinegar
  • 1/2 tsp. black pepper corns or ground black pepper
  • 1 tbsp. brown sugar
  • 1/2 tbsp. minced garlic
  • 3 pcs. bay leaves
  • 1 tbsp olive oil or vegetable oil
  • 1 tsp cilantro for garnish (optional)
  • 1 stalk finely chopped green onions for garnish (optional)
  • pinch salt optional
  • pinch ground black pepper optional

Instructions

  1. Mix together soy sauce, vinegar, black peppers, brown sugar and minced garlic.

  2. Mix the marinate mixture with the chicken. Marinate at least 30 mins. I recommend over night (optional)

  3. Heat the oil in a pan and brown the marinated chicken wings. Don't throw the marinade.

  4. When the chicken is all browned, dump the marinade into the pan. Simmer and put the heat to low for 30 minutes or more until the chicken is cooked through and the sauce is reduced to your preference or caramelized.

  5. garnish with cilantro or green onions (optional)

Recipe Notes

The secret to a best tasting adobo is to marinate it overnight but 30 minutes is also good enough for the flavor to seep through the chicken.
